Saturday, April 19, Slow Food Des Moines co-hosted a “meat workshop” at Story City Locker, up in Story City.
Six people attended the workshop, and got a tour of the facility from Story City Locker owners Ty and Bobbie Gustafson. The workshop itself detailed the breakdown of a half hog into primals, then into retail cuts. Each participant got to take home 10 lbs. of the freshly-cut pork (and a cool Story City Locker t-shirt).

Story City Locker is a classic abbatoir and artisan butchery. They practice ethical animal take-down and sustainable butchery. Staff do custom processing for producers and individuals, and also have individual cuts of meat for sale.
