The seven-course meal with a Slow Meat theme is being created by members of the Chefs’ Collaborative:
- Joe Tripp from Alba
- Austin Bailey from Wesley Arces
- Brett McClavy from The Cheese Shop of Des Moines
- Katie Porter from Wallace House
- Michael Balaski from The Cheese Shop of Des Moines
- Joseph Kurth from Wild Yeast Bakery
All these chefs are generously volunteering their time, donating their wild creativity and culinary expertise to the advancement of Slow Food in Des Moines.
Working on the June 28 Slow Meat dinner gives these artists the opportunity to create their very own unique dish and work alongside their colleagues. (With no practical constraints on what to serve, or bosses to tell them what to do).
The dinner will be prepared with local ingredients from such growers and purveyors as Crooked Gap Farm, Grade A Gardens, Story City Locker, Berkwood Farms, Farmtable Delivery, and The Cheese Shop of Des Moines.
